Peanut Soba Noodle Salad
I like trying different flavor combinations all the time. I never want to eat a food so much that I stop enjoying eating it. I love soba noodles, but I think it is important to continue to mix up what kind of sauce that I put on them. I came across this recipe for peanut sauce covered soba noodles and had to give it a try.
This dish comes together quickly, so it is best that you prepare all of your ingredients ahead of time. I started by cooking my soba noodles. While they were cooking, I prepared the peanut sauce. The peanut sauce was made from peanut butter, water, soy sauce, sesame oil, honey, lime, garlic, sriracha, and peanuts. I also thinly sliced bell pepper, sliced carrots, prepared cilantro, and crushed peanuts. The original recipe called for chicken, but I omitted that. It also called for cabbage, but I decided to use carrots instead. Once, it was all ready, I tossed everything together in a large bowl and split the mixture between 6 lunch containers.
I love these types of dishes for lunches. This is a cold salad, easy to prepare, and is satisfying. This checks all of the boxes for me when I am thinking about what kind of lunch to make!
