Gordon Ramsey’s Baked Eggplant

I found this recipe on Instagram by Maya (here). I think she changed his original recipe, but I did follow her directions. She shares a shot reel with the recipe in the description. I also did a bit of research and noticed that Gordon Ramsey did have a recipe online (here) that is a bit different than Maya’s so I would be interested in trying his version. His recipe is much more intense than the version that Maya shared.

To be honest, I was not impressed with this dish. The flavor of the rub stayed only on the very outside of the eggplant. Maybe the eggplants were too big so the flavor needed more time to penetrate the vegetable. I think this would have been a lot better if I decided to dice the eggplant so that the spices and flavors could penetrate each piece rather than staying on the outside. I think the flavors were great, but I was disappointed that they only stayed on the very outside of the eggplant.
