Fried Rice (With Leftover Rice)

The best part about rice is leftover rice! I am sure you think I am crazy for saying that, but I will explain why. When you have leftover rice, you can make fried rice. Leftover rice makes the best fried rice!

After making the baked coconut rice, I had a little leftover so I asked Jacob to help make fried rice. He asked me to prep the veggies and then he would cook them. I diced a small, sweet pepper. I minced garlic and chopped green onions. He sautéed the peppers and then added the garlic. Once the garlic was fragrant, he added in the rice. After the rice cooked for a few minutes, he added in the egg and soy sauce. He finished the dish with the green onions and sesame oil. We had this for breakfast one morning and it was just delicious!

Fried rice is a quick and easy meal that helps use leftover veggies in the fridge. We could have used any numbers of additional vegetables in this dish, but we decided to keep it simple. We could have also added a number of different sauces or miso to enhance the flavor.

        We decided to keep it simple with just the soy sauce. This fried rice was so delicious!
