White Bean Salad (For a sandwich or wrap)

As you know, I like to have some quick lunch ideas on hand for the days that I need something to grab and go. I came across a recipe for white bean salad and wanted to try putting it in a wrap with spinach and cucumber. This recipe was super easy. It called for white beans (smashed), lemon juice, olive oil, salt, pepper, and fresh dill. Unfortunately, I forgot to buy fresh dill so I substituted it with dry dill. The dry dill did not work as well as fresh dill would have, but it did get the flavor across. 

This white bean salad can be put on bread for a sandwich, in a wrap, or even on a bed of greens. I like the flexibility of the salad! This is a great alternative for lunch when you need something quick and filling. I love adding beans to different meals because they help keep me full.



Taste: 8/10--It would have been better with fresh dill.

Notes for next time: Use fresh dill!
