Vegetable Wraps

Vegetable wraps are my go-to lunch when I don’t have a lot of time or when I have veggies in the fridge that need to be eaten. I always start with some type of tortilla. I like the large ones, so that I can add enough veggies into them. I put down some hummus and then I layer in the vegetables. It is quite common that I use cucumber, tomato, onion, and spinach. I love to change these wraps up by changing the hummus or the veggies (or both!). I also like to use lettuce, pickles, crispy onions, or crushed up tortillas. I have added salsa to the wraps and pico de gallo. I do love to use fresh herbs and pickled jalapenos.

One other component that I like to add are canned beans. The one in this picture is showing cannellini beans. I drained them and rinsed them. I added them to a bowl with some paprika, salt, and pepper. I smashed some of them and left some of them whole. I like the beans to add some heartiness to the wrap as well as to add texture. I have used black beans, pinto beans, and garbanzo beans.

I love the creativity with these wraps! The wraps are such a great option because they are easy and pack a lot of vegetables into them! They are also fun to make because you can change everything about them so that they are always different!
