Peanut butter and Jelly Overnight Oats
This week I realized that it has been way too long since I have had overnight oats, so I decided to make them! The night before I wanted to have them for breakfast (hence overnight) I prepared them. I started by whisking together almond milk, peanut butter, vanilla, and a pinch of salt. I stirred in my oats and put the covered bowl into my fridge. In the morning, I got up and put the oats in a bowl with my toppings. I went with peanut butter in the oats because I wanted a peanut butter and jelly theme.
I decided to top my overnight oats with some jelly, chopped peanuts, banana, and shredded coconut. The toppings for overnight oats are endless! Strawberries, maple syrup, almond butter, chia seeds, and nuts are all great topping ideas! It is also a good idea to mix different things into the oats overnight like chia seeds or berries.
I think overnight oats are super underrated because they are delicious, easy, and help provide a nutritious breakfast. Another great thing about them is how easy it is to change the different ingredients to get different flavors. I could add cocoa powder for chocolate oats or add different things to replicate an almond joy flavor--the possibilities are endless!

Notes for next time: I love being creative with different additions to my oats! Maybe cocoa powder, maybe fresh berries, maybe cinnamon?
