Mushroom Tetrazzini (Comfort Food!)

I am sure by now that you have figured out that I love comfort food and I love pasta. Comfort food made from pasta is one of my favorite things! Jacob found this idea a long time ago and I remember it being so delicious that I wanted to make it agin. I will link to the original recipe for mushroom tetrazzini below. This recipe creates an incredibly creamy pasta dish that leaves you wanting more. It has sauteed mushrooms, peas, and a beautiful cream sauce. It also has this incredible bread crumb topping that finishes the dish perfectly. The best part about it is that there is no dairy in it!

There are two specific ingredients in this dish that make it specifically vegan. The recipe calls for vegan butter and non-dairy milk. If you are looking for a plant-forward dinner, but you don’t want to buy vegan butter or you are just trying to make more meals focused on plants, you can easily swap out these two ingredients for their dairy alternative.

The only thing that I would change about this recipe is that it calls for 10 ounces of pasta, but I would use 8 ounces of pasta without changing the amounts of anything else. I love how creamy the sauce is and how delicious the dish pulls together, but I think it would be better with just a little bit less pasta so it could have a better sauce/pasta ratio. I think everything else about the recipe is great!

The only thing that we changed was the type of pasta. Jacob prefers any type of short pasta, so we made this with rotini rather than spaghetti. I think this dish was great with the rotini, but I would probably prefer it with the spaghetti. I prefer any type of long pasta like spaghetti, angel hair, and fettuccine. Anyway, all I am saying is that this recipe for mushroom tetrazzini is so delicious!
