Whole-Wheat Spaghetti with Green, Beans, and Tomatoes (Recipe #84)

I love easy pasta dishes. This recipe for spaghetti with greens, beans, and tomatoes was easy to put together and it did not create a lot of dishes while putting it together!

The recipe is exactly what the name suggests. I used whole-wheat spaghetti, spinach, cannellini beans, and diced tomatoes. The recipe also called for garlic--a portion of it to make “garlic chips” and a portion used to be minced into the mixture with the spinach. The recipe also called for onion, vegetable broth, nutritional yeast, miso, oil, red pepper flakes, and kalamata olives. The recipe said to combine the vegetable broth, the miso, and the nutritional yeast. I used this broth mixture to help the spinach simmer after it was sauteed with onion and garlic. I added the beans and olives to that mixture. When the pasta was done cooking, I returned it to the pot and tossed with the mixture I just created.

I was afraid that I wasn't going to like this pasta because it calls for ¼ cup chopped kalamata olives. I love a lot of food, I like some, but I do not like olives. I have tried lots of olives and there was only one specific time that I liked them. A friend and I were having a meal in Spain and they put olives on the table before our food came. My friend encouraged me to try them. I was/am so determined to like olives that I said I would. I loved these olives! I don’t know what kind they were, but I do know that they were delicious! Anyway, that was a long story just to say that I do not prefer olives. I did like the pasta dish. I probably would have loved the dish without the olives.

This pasta recipe did call for a pound of pasta, so Jacob and I ate it for 3 meals each (a total of six servings). I think next time that I would half the recipe and make a side dish with it, so we could each eat it twice. I love pasta and I love eating days in a row, but I stop enjoying what I am eating after a couple times.

Level of difficulty: 1/5--easy, very few dishes involved

Notes for next time: As you know, olives are one of the only foods in the world that seem to not like me. I liked this dish, but I would love it without olives! Jacob loved it just the way it was!
