Stir-Fried Eggplant with Garlic-Basil Sauce (Recipe #50)
Am I the only one that loves a good stir-fry?
This eggplant stir-fry was a winner for a couple of reasons. First, it was delicious! Second, it was very easy! This was a great week-night dinner that was very satisfying. I quickly browned the eggplant with the bell pepper, added garlic, and added the sauce. Off heat, I stirred in the basil and scallions. I put this mixture over brown rice and it made a nice dinner. It was slightly spicy, full of flavor, and had a nice texture. I was surprised at how delicious this turned out. Jacob is not a big fan of eggplant, but he did enjoy this!

Notes for next time: I think this sauce would be good with zucchini!
