Red Rice and Quinoa Salad (Recipe #67)
I am very happy that this red rice and quinoa salad recipe was included in the Vegan for Everybody cookbook. This salad was light and refreshing--just perfect for a summer day!
The focus of this salad was supposed to be red rice. The introduction to the recipe explains how the unique flavor of red rice is underutilised. Unfortunately, I could not find red rice--even after checking multiple supermarkets. I did, however, find a blend of rice that included red rice. This blend was labeled as a whole grain blend including heirloom red rice, long grain brown rice, pearled durum wheat, wild rice, and a few others. I used this blend in the salad! I also used quinoa, lime juice, oranges, shallot, cilantro, red pepper flakes, and oil. This salad was easy to put together. The combinations of flavors made this a really great salad!
I would love to make this salad again. I would not change a thing about it. I thought the balance of flavors worked really well together. The cilantro added some freshness, the dates added sweetness, and the grains pulled it all together. The citrus was also a welcoming surprise that helped tie the dish together!
