Cilantro Sauce (Recipe #12)

        I prepared the cilantro sauce from America’s Test Kitchen cookbook to top on the pinto bean and swiss chard enchiladas. This sauce was excellent on top of the enchiladas! It added some creaminess and lightness to the dish!

I liked the cilantro sauce, but there was a slight taste of the dairy-free sour cream. I used the Tofutti, like the recipe recommended, but I still felt like there was a hint of something unfamiliar. I would make this sauce again for the enchiladas, for a grain bowl, or even for salads, but I would probably add additional cilantro.



Taste: 7/10-- This was a nice, creamy sauce, but the dairy-free taste was quite distinct.

Notes for next time: Add a bit more cilantro!
