Black Beans on Toast with Avocado and Tomato (Recipe #1)

        Today, I tested the black beans on toast with avocado and tomato in the America’s Test Kitchen Vegan for Everybody cookbook. It was the perfect way to start my morning! I am going to be making this a regular part of my breakfasts (or maybe even lunches!)

One thing that I have noticed about this cookbook is that there is an explanation as to “Why This Recipe Works” above the directions to every recipe. Basically, the entry above this recipe explains how they created a more hearty breakfast as compared to the typical avocado toast. This describes it perfectly! The beans helped the toast to be more filling. At first, I was worried, like why are we mixing water with beans, but I understand it was to help soften the beans to mash them. Then, adding some salt, peper, lime zest, and lime juice, the beans really stood out with a lot of flavor.

This cookbook is going to help challenge me to push the boundaries that I currently know with food. For example, I would associate a lime with Corona beer or as a wedge on the side of a dish that I would leave there. This dish helped to show the beautiful flavor of lime and pairing with cilantro really took it to the next level. I am excited to see where I can use lime and incorporate lime where I have not before!

This was totally worth waking up a little earlier than normal to prepare!

Notes for next time: Maybe try mashing the avocado and putting it as a layer on top of the beans so there is some in every bite.
