What does it mean to be Vegan? Why am I choosing to cook through a vegan cookbook?

        A person who identifies as vegan is an individual that does not consume any animal products at all. This includes, but is not limited to, meat, seafood, dairy (like butter, cheese, and milk), and eggs.

I am choosing to cook through a vegan cookbook for a handful of different reasons of which I can name a few:

  1. I want to incorporate more vegetables into my everyday diet.

  2. I want to make healthier choices by cooking more items from scratch and using less processed ingredients. 

  3. I want to create a more sustainable lifestyle.

There are many more reasons why I chose to start with a vegan cookbook, but I felt these were the most important three. Throughout this journey, I want to include recipes from other cookbooks and sources that may or may not be vegan. However, I chose the vegan cookbook as a teaching mechanism to help me with the three reasons I mentioned above.
